Possible to recover app content from backup file without iPod?

i'm having problems ipod touch, noted in <http://forums.macrumors.com/showthread.php?t=1340731>.

however, if turns out ipod isn't salvageable, there way recover content had written on (within notes app) using last backup (saved via itunes on macbook pro)? if it's in other format?

there sentimental scribblings in there keep, if possible.
