How do I put album cover art on my Touch?

i have bunch of cover art albums, touch doesn't seem pick them up? of covers display fine, others mia. ideas why?
have id4 tags?

also, using sharepod adding songs etc. find itunes unintuitive , overly complicated use.

 

itunes should tag them properly, aac or mp3?
