Switching iPod data to a friend's iPhone?

hey all;
friend giving me iphone 3gs, because moving out of country. adopting phone, along phone number. have ipod touch , ipad 2. question this:
can move ipad/ipod data on iphone, , delete stuff (apps, photos, numbers), , transfer apps , phone book iphone?
worried restoring phone ipod backup, , wonder if mobile provider wont recognize phone, or may corrupt sim or phone number.
