Interfacing iPhone with hardware wiring

hey guys,

i'm interested in gathering information ability use iphone control wired accessories (as on/off switch, voltage control, etc.). i'm versed in application development, have little knowledge how interface application hardware actions. i'm sure can done i've seen iphones used car stereo decks , such, don't know how interface physical software. if have insight how use iphone physical on/off switch, or modify voltage of connector let me know.
