iPod touch for company use

first, sorry if doesn't fit in here, please move if necessary.
have customers have technicians on site working me (maintenance team). right i'm implementing maintenance software (web based) track tasks.
therefore chose ipod touch tech "pda/terminal/data input/thingy".
web interface customized use resolution of the
ipod touch , it's quite simple start time, end time, used material, etc.
question is, there way remove/hide apple standard apps (i need safari , mail)?
