How to prepare my iPad 2 to give to my g/f

i got new ipad, , giving ipad 2 girlfriend. it's jailbroken on 5.0.1 , don't want lose jailbreak.

plugged mbp , unticked "sync apps", "sync music", etc etc try , remove stuff, music , photos still on there. plugged g/f's mb, , chose "erase , sync" seems it's trying add stuff mine, rather remove stuff.

can't use "erase content , settings" because it's jailbroken , option doesn't work. , can't restore firmware, cos apple stopped signing 5.0.1 , i'd have upgrade 5.1 , therefore lose jailbreak.

other options?

 

be real man. give ipad 3.
