it sounds may have imported music itunes following 2 boxes checked in itunes > preferences > advanced:
if so, means itunes made copy of song files. when edit tags in itunes, it's changing copy itunes made. it's not changing original file.
aware changing tag information in itunes modify tag data in mp3 file. need make sure file itunes has. if music organized in file/folder structure prefer, uncheck 2 boxes , import original music files. can either move music folder itunes media folder location shown above, or click change , select location wish.
upon looking @ screen shots (i didn't before) appears tag information accurate. think you're referring mp3 file name, editing tag information won't change. can elect change file names based on tag information, using file renamer script listed below.
