Securing data on partitions/volumes

i partition 1tb drivers 4 partitions, 1 sys/apps, 1 data, etc..

how password protect partitions don't have system/boot on them?

osx (using sl, not lion) allows password protected login on boot partition, how other partitions? automatically mount!

i have not used myself, know people use truecrypt.
