iOS 5.1 Upgrade - Guidance Needed!

so i'm going upgrade 5.1 jb 5.0.1 , need here. i'll looking setup 4s new iphone , restoring of data here's question.

should update 5.1 , follow steps here (http://support.apple.com/kb/ht4137) erase , setup 4s new iphone?

or

should ease, setup new , update 5.1?

just update on jailbreak. if encounter problems, can restore after update if necessary.
