Custom install from Apple's thumb drive

hi all,
last week i've installed lion on 1,1 macpro unfortunately cannot select custom installation (common issue around). there way delete additional packages used not install beloved previous macos x versions?? (ie: additional languages and/or software and/or drivers) ssd amazing pretty small... additional mb appreciated!

i'm ready install lion on macbook , same thing... maybe should burn dvd apple's thumb drive enable custom install button? if there tutorial? there lot of tutorials downloaded version none how burn disc apple's original thumb drive (there not installesd file inside thumb!).

1 more thing... installing directly thumb drive (booting it) installer first copy stuff hd , start real installation directly destination hd... wrong? no way things old dvd-based installations, isn't it?

the lion installer has far fewer customization options previous versions of os x. method use install lion doesn't change that.

part of apple's thinking may hard drives larger now. , fewer install options means less variation on what's installed if troubleshooting needed.
