iPhone 3GS restore ....

hi. start have searched forum , google , haven't found answer question...
having said ( since know people hate repeated posts )

did:
have iphone 3gs, has 5.0.1 bb 05.16.05, jail broke , tried install siri through spire no luck, feel phone slow , apps safari , facebook crash 8 out of 10 times.

want restore stock 5.0.1.. have no problem unlock since use original carrier....

tried using itunes restore 5.0.1 stock ipsw no luck, says 'not edible'.

tried reset through phone , got stuck while, had reset , normal.

questions:
way restore normal factory settings on 5.0.1?
if update 5.1 able jailbreak? if there no unlock?
