Backing up jailbroken/unlocked iPhone to new iTunes

i have 3gs iphone jailbroken , unlocked use pre-paid sim card when moved abroad. backing through itunes until personal computer stolen. have re-downloaded itunes on new external harddrive via work computer , want iphone afraid of erasing data in process , want maintain jailbroken , unlocked. advice? in advance.
