Synching with IPhone

can me synching problem. delete unwanted apps, videos , music itunes library , plug in iphone 4 synching. proceeds download iphone itunes libarary have deleted cant seem rid of anything.

in particular have episodes of top gear delete itunes ask sync phone copies back.

cant seem delete direct phone unsure of try next. have asked not sync tv shows nto rid of off phone.

have tried deleteing them on iphone swiping finger right on video or song? depends version of ios have well.
