Iphone Contacts Question

i have iphone 4s, have imac address book.
typically collect numbers/contacts people iphone , transfer address book when sync etc.

don't ever want delete address/contact address book on mac....i want add it. not want 300 contacts on phone given 1/4th of them never talk or text with.

how do this?

now, every time delete number phone while adding numbers...it forces me todo same on icloud or itunes when sync

 

you can't.
