Why are the display models so....slow?

for reason, always, when go apple store , go 1 of imacs, or macbook airs, mac pro or 17-inch macbook pros, they're slow! mission control doesn't show animations half time, or animation lags lot. waiting genius thought i'd check e-mail on air next me, , took forever safari come up! has else noticed apple store computers seem slow? seems odd....
