How do I Install OSX Lion on a brand new SSD?

i ordered 8gb ram , 160gb intel 320 series ssd 2010 macbook pro 13" , usb sata enclosure.

plan make current 250gb hitachi hdd external hd old files enclosure.

want following things:

(a) how install osx lion on new ssd either usb, dvd, or current hd (i don't want clone it'll "clean" nor want use appstore download because of slow , intermittent internet)

(b) how turn current drive (soon-to-be "old") back-up drive (like flash drive, without os files, since won't booting anymore)

(c) tweaks @ optimizing macbook pro's performance? disabling spotlight indexing , disabling dashboard? programs can live without garageband , x11 , how remove them?
