iPad Restore iPad without updating to ios 5.0.1

hello,
need restore ipad 2 can't without letting itunes update me ios 5.1. jail broken, that's why don't want go 5.1

need reinstall cydia. somehow deleted while deleting apps installed through cydia. tried ee jailbreaks, told jail token , process stopped.
