what people think of monosodium glutamate in food?
it's controversial ingredient... feel it's overused, , eating produces negative side effects (the famous 'chinese restaurant syndrome'). while i've felt effect once or twice after eating in restaurants, i'm not convinced msg cause (i've eaten plenty of msg elsewhere no ill effects). there appears no strong scientific evidence of problems, , fda classifies safe... there's lots of anecdotal evidence contrary.
glutamates appear , naturally across range of food. japanese identified them providing savoury taste (akin saltiness or sweetness) , named taste 'umami'. italian food high in natural glutamates... parmesan cheese potent source, tomatoes , meat. msg industrial source of same flavouring.
should treat msg akin salt - essential , harmless flavouring our food? or chemical should distrust , reduce our reliance on?
(one reason i'm starting thread article read yesterday divulging recipe behind kfc's special coating. that's right - tasty secret bucket of msg).
1. salt.
2. glutamate neurotransmitter.
3. people eating @ kfc should shot in head.
