iPad 2: Any way to backup my jailbreak?

i'm getting refurbished ipad 2 today , people ordered 1 said should come 5.0.1.

want jailbreak it, , know can never restore 5.0.1, there way sort of backup in case screw phone stay on 5.0.1?

 

why bother jailbreak on ipad?
