Upgrade Apache Tomcat and PHP on Snow Leopard Server?

i new server administrator in educational institution has several mac servers running snow leopard server. recently, requested update php , apache tomcat versions on servers. specifically, php version 5.3.8 , tomcat 7. relatively new mac os x server administration , haven't done type of thing before. i'm having trouble finding useful information this. can tell me if it's possible update these on snow leopard server , if so, process is?
