Set up as new iPad or restore from back up?

i have quick question. did search couldn't find answer.

did backed ipad 2 before selling , getting new ipad on friday.

thing want previous ipad pages documents , contacts. apps/photos/other things don't need on new ipad.

so, can set new ipad , documents , contacts. or can previous ipad choose , not want?

hope makes sense :-/

 

i believe can check or uncheck apps latest ipad 2 back-up in itunes when sync new ipad apps transfer over.
