Resolved Play 1080p in iTunes but sync 720p to iPad?

hey,
in itunes have 3 versions of every movie, 1 in 1080p, 1 in 720p, , 1 in 960x640.
reason file size. have apple tv's hooked home cinema systems, there want 1080p 5.1audio versions.
on ipads want 720p 2.0audio versions , on iphones , other mobiles, want 960x640 2.0audio versions.
in itunes seem find setting can make me choose prefer sd versions on iphone/ipad.
iphone works fine, not ipad, have preference want 1080p play on computer , automatically picks 1080p hd sync ipad. if change setting prefer 720p pick version, afraid stream 720p version apple tv. (i can't test away home 2/3 weeks)
hoping me figure out before spent pointless hours creating 3 way combos in itunes.

in case wondering, when have 3 versions of movie in itunes, apple tv 2 (720p version) plays 720p video file, when have 1080p , sd plays sd, way play 1080p version delete other versions!
, impossible play video through home sharing on ipad 2 or iphone 4s (haven't tested others) when it's marked 1080p content, change tag 720p , play fine...
result have 2 versions, 960x640 , 1080p marked respectively sd , 720p.
